Autumn at the ranch means hunkering down and preparing for the cold winter and that means baking! The ranch has a long history of good food and good cooking. We thought we’d share with you one of our fall favorites!
The Sweet Potato Casserole
1/2 cup – Sugar
1/2 tsp – Salt
1 1/2 tsp – Vanilla
2 – Eggs beaten
1/4 Cube Butter melted
1/4 cup – Milk
Mix and beat all together until fluffy.
3 cups – Cooked sweet potatoes
Stir in sweet potatoes and beat until well mixed and fluffy. Put into 9×13 pan
Topping: Mix until creamy
1/2 cup – Brown sugar
1/3 cup – Flour
1 Cup – Pecans (chopped)
1/3 Stick of butter (softened)
Bake 350 – 45 min – 1 hr
